Breakfast Cookies from The Blue Zones


I made these easy and healthy breakfast cookies after seeing them in the Blue Zones cookbook HERE, I slightly modified it (no nuts) but you can find the original recipe HERE. They are made with oatmeal, which is a healthy affordable staple and filled with fiber, iron, potassium and B Vitamins.


I really liked these, but felt like the chocolate was too sweet for breakfast (I prefer savory things first thing in the morning) but they made the perfect mid-morning snack. They were easy to make with just a few ingredients you probably have on hand.


Ingredients:

3 large ripe bananas

1 3⁄4 cups quick oats (I used gluten-free)

1⁄4 cup chocolate chips (I used the mini chips)

1⁄4 cup applesauce (unsweetened)

1/8 cup honey


Mash the ripe bananas with a fork, and add in all the other ingredients. Drop about one rounded tablespoon per cookie on a baking sheet. Bake for 15 minutes at 350, remove to rack to cool.

These look yummy, thanks for sharing. I'm with you on the savory front but these do look good to have, perhaps with coffee late morning. Sorry if I missed a post, but why did you omit the nuts - allergies or just a dislike? I toasted nuts in & on many, many things. Haha
