I modified this recipe from Eating Bird Food.


1 package (all-natural) Ground Pork or Chicken

1 package Cole Slaw Mix

1/4 c chopped Red Onion

2 Garlic Cloves, minced

1 Large "Knuckle" of Fresh Ginger (store in freezer to always have on hand!), peeled, grated and chopped.

1 T Sesame Oil

1/4 c Coconut Aminos

1/4 c Chopped Green Onions

Heat a large saute pan to medium, add the oil, then add the garlic and the fresh ginger and saute briefly, being careful not to let it burn. Add the onion and saute for about 1 minute until soft. Add the Pork or chicken and cook thoroughly. Add the Cole Slaw Mix into the pan, and pour in the Coconut Aminos. Saute together for about one more minute then remove from heat. Top with Green Onions and serve.

She recommends serving over cauli rice, you can also add in a beaten egg for more protein and flavor.
