Mediterranean Salad Bowl



This is one of my go-to lunch ideas. It is full of healthy ingredients, is easy to prep and will keep you full for a long time. It is a great dish to meal prep then store and grab for lunch during the week. You can tweak the recipe with what you have on hand, this is my basic mix of ingredients.

Mediterranean Quinoa Salad

(approximately 1-2 servings)


1/2 Chopped, Cooked Chicken Breast ( I make extra nights we grill for lunches)

1 c Cooked Quinoa (You can make more to stretch this)

1/4 c Feta Cheese

1/2 Cucumber, Peeled and Chopped

1/4 c Red Onion, Diced

1-2 T Fresh Herbs (Parsley, Mint, Oregano)

1/2 c Garbanzo Beans

Salt + Pepper to Taste


Add Chicken and Quinoa to Bowl, then add all other ingredients and mix. Top with dressing (below) or just a squeeze of lemon juice with 1-2 T of EVOO.


Dressing:

Mix Together:

1/4 c EVOO

1/4 c Fresh Lemon Juice

1 t Dried Oregano

1 t Dried Parsley

1 Garlic Clove, Diced
