Protein-Packed Salad and Homemade Italian Dressing

Salad Ingredients: (Serves 2 generously)

1 large head of organic romaine lettuce, washed and chopped.

2 chicken breasts, grilled or baked, cooled and chopped. (we make extra when we grill for another dinner).

3 hardboiled eggs, cooled, peeled and chopped.

5 slices nitrate-free bacon, cooked, cooled and diced

1 cucumber, diced

cherry tomatoes, red onion, avocado, cheddar or feta cheese, optional.

Mix ingredients in a large bowl, and top with dressing below.

Dressing Ingredients:

1/4 cup good quality, extra virgin olive oil

3T red wine vinegar

1 T fresh lemon juice

1/2 t garlic powder

1 t dried oregano

1 t salt, pepper to taste

1/2 t onion powder

1/4 t red pepper flakes

1 t dried parsley

Mix everything together in a jar (I like to use a small mason jar such as these, and shake all ingredients together very well) You can store the leftovers in the refrigerator for several days.
